    Desarrollo de una mejora del sistema de control de calidad basado en la norma HACCP para una empresa productora y comercializadora de carne bovina y porcina en la ciudad de Santiago de Cali

    The producer and marketer of bovine and porcine meat located in the city of Cali, is a dedicated manufacturing company, to the desposte and sale of products derived from bovine and porcine species, which has been in the Valle del Cauca market for more than 30 years. ; through the initiative of one of the authors who executed their period of practice in the organization, which was the starting point for starting this project called "Development of an improvement of the quality control system based on the HACCP standard for a company that produces and markets beef and pork in the city of Santiago de Cali. "; which has as main objective the implementation of a quality methodology based on statistical controls, where, it is expected that there will be a decrease in the indicator of product returns due to quality conditions. As a result, a significant reduction is achieved with respect to the returns indicator, which represents the objective of the project. The indicator decreased 48.5% in the returns of Bovine product and 35.2% for the family of Porcine product, compared to what was currently obtained, which was 1.96%, where it was improved to 0,98% for the bovine family, and from 1.35% to 0.64% for the swine family.

    The main objective of this work is the design of a process to follow the contractual processes of the projects administered by the Secretariat of Social Welfare. These projects are funded by the state and by the mayor. A diagnosis was made using Industrial Engineering tools; A flow chart was made and the proposal was executed using the SPLAN software. As a result, a systematic process of traceability that complies with the quality management system of the city of Santiago de Cali.

    The following degree wok consists of the partial implementation of the safety and health management system in the work sg-sst under decree 1443, which was included in chapter 6 of Decree 1072 of 2015 in the Company Victoria Cargo Transports SAS applied to all the personnel of its four Yumbo, Buenaventura, Cartagena, Bogotá, suppliers and contractors, in order to establish controls to mitigate the dangers to which they are exposed day by day.

    This work was based on the MRP methodology for the design and implementation of a proposal for improvement in the production system, this project was developed in Alimentos Angelita Ltda. (ALIAN). This company is dedicated to produce confectionery and is located in the city of Santiago de Cali. A good management of the production system of the company, allows to know the material requirements for the production of a specific reference, standardization of time, that allow estimate the time production for a specific reference. For the development of the project was necessary to diagnose the production system through brainstorming, document management and semi structured survey; then has been made the characterization of the production processes with take time, bill of materials, labor analysis and evaluation production process.
