Caracterización fisicoquímica del sustrato agotado de Pleurotus ostreatus (orellana) y sus potencialidades agroindustriales

Abstract
In Colombia, there is a production of P. ostreatus, by the Smallholders, who work since 2007 in mushroom production "oyster type" in small facilities located on their farms. These productions are based on the use of waste resulting from the main agricultural activities in each area sugar cane being one of the most important since the sugar industry generates lots of bagasse as waste. However residues of post-harvest Orellana, what is typically known as "depleted substrate" not yet been sufficiently investigated to identify their agribusiness potential. This study aims to identify the physicochemical characteristics of Pleurotus ostreatus residues, in order to explore alternatives for later use. The variation of the nutritional characteristics of the substrate exhausted in producing Orellana, depend on the materials used for enrichment, as the initial substrate. The union of these two variables is reflected in the content of carbohydrates but not fat percentage, which depends more on the substrate of attachments.

En Colombia existe una producción de P.ostreatus, por parte de los Pequeños Productores, quienes trabajan desde el 2007 en la producción de hongos "tipo ostra" en pequeñas instalaciones ubicadas en sus fincas. Dichas producciones se basan en el aprovechamiento de residuos resultantes de las principales actividades agrícolas de cada zona siendo la caña de azúcar uno de los más importantes dado que la agroindustria azucarera genera gran cantidad de bagazo como residuo. Sin embargo los residuos de la post-cosecha de la Orellana, qué típicamente se le conoce como “sustrato agotado” aún no se han investigado suficientemente para identificar sus potencialidades agroindustriales. Con este estudio se pretende identificar las características fisicoquímicas de residuos de Pleurotus ostreatus, con el fin de explorar las alternativas para su posterior utilización. La variación de las características nutricionales del sustrato agotado en la producción de Orellana, dependen de los materiales utilizados para su enriquecimiento, como del sustrato inicial. La unión de estas dos variables se ve reflejada en cuanto al contenido de carbohidratos pero no al porcentajegraso, el cual depende más del sustrato que de los aditamentos.
